Rhebokskloof Wine Estate, situated in the scenic Paarl area, is searching for a creative and motivated Sous Chef to join their talented kitchen team. The ideal candidate is a creative professional with excellent leadership and communication skills, and has in-depth knowledge of several cooking methods, ingredients, equipment, and processes. The successful candidate will act as 2IC in the kitchen, following and enforcing our Executive Chef’s requirements and guidelines, and will be responsible for: *leading kitchen team in Head Chef's absence *providing guidance to junior kitchen staff members (line cooking, food preparation, dish plating, etc) *overseeing and organising kitchen stock and ingredients*ensure first-in, first-out food rotation system, verifying that all food products are properly dated and organized for quality assurance *keeping cooking stations stocked *training of new kitchen employees to restaurant and kitchen standards *managing food and product ordering by keeping detailed records and minimizing waste, plus works with existing systems to improve waste reduction and manage budgetary concerns *supervise all food preparation and presentation to ensure quality and adherence to restaurant standards *work with Head Chef to maintain kitchen organization, staff ability, and training opportunities *verifying that food storage units all meet standards and are consistently well-managed *assists Head Chef with menu creation *coordinating with restaurant management team on supply ordering, budget, kitchen efficiency, and staffing *all other tasks related to the role. Essential qualifications, skills and experience: • A relevant tertiary qualification and/or accredited practical training; • Minimum 2-3 years' experience in a similar role; • Extensive Food and Beverage Knowledge; • Knowledge of Restaurant Regulations; • Willingness to participate in creating delicious seasonal menus and meal designs; • Fully bilingual (Afrikaans & English); • Own reliable transport.
